Keto-Friendly, Low-Carb Bagels

With all the latest food and health kicks this recipe in particular caught our eye because of the amount of cheese that it calls for. At a first glance this definitely looks like  a normal, carb-loaded, and tasty bagel BUT don't be fooled! This recipe is a keto friendly, low carb, grain free, and CHEESE filled bagel. This is truly a recipe for those that do not want all the carbs of bread because the texture is not soft and fluffy but more like a homemade biscuit.  
 

Ingredients

1¾ cups Almond Flour
1 T Baking Powder
2.5 cups Shredded Ferndale Farmstead Mozzarella
2 oz Cream Cheese
2 large Eggs
Optional: Sesame Seeds, or garnish of choice

Instructions 

1. Preheat oven to 400 and line a baking sheet with parchment paper. Mix the almond flour and baking powder in a bowl and set aside.

2. Shred your Ferndale Farmstead Mozzarella in a bowl. Add your cream cheese to the same bowl and microwave for 2 minutes, stirring halfway through, until the cheese is completely melted.

3. Add the almond flour mixture and eggs to the melted cheese. Make sure you are carefully stir everything nicely together. The dough will be very sticky, but it's important to mix it quickly while still hot, and make sure it is very well combined.

4. Divide the dough into 6 even parts, rolling each out into a rope, then molding each rope into the shape of a bagel. Top with sesame seeds, if desired, and baked at 400 for 10-14 minutes. Let them cool for a few minutes on the baking sheet and then remove. We ended up topping off our bagels with a little bit of butter. ;) 
 

Nutritional Information per bagel 443 Calories: 8.5 g of carbs, 22 g of protein, and 38.3 grams of fats.
